'Tis the season! As you guys may or may not know, I work at Lush now! It's such a wonderful place to work during the holidays and the people there are so nice and wonderful and fun! So inspired by the Rudolph Fresh Face Mask, I've created my own Rudolph smoothie
- 1 banana
- 3-4 chunks frozen mango
- small handful of raspberries
- small handful of spinach
- 1/4-1/3 cup of soy milk
Blend everything until it’s nice and frothy, add more water if you like a thinner consistency! Cheers xx

Sweet potatoes stuffed with baked bean breakfast toasties
Best invention ever. Nuff said.
- 1 thick slice of bread
- 1 small sweet potato (baked/steamed/boiled)
- 1/2 cup baked beans in tomato sauce
- salt/pepper to taste
Toast the bread to desired toastiness
While the bread is toasting, slice the sweet potato and heat up the beans in a bowl

I slaved myself for 6 hours making this meal.
Spicy kale; creamed quinoa with dill, chickpeas and green peas; roasted garlic oregano potato wedges; rotisserie chicken and creamed mushrooms with chardonnay and soaked toasties!

P.S this recipe is great for Valentine’s Day. Just sayin’.
Vegan scalloped potato POLENTA pizza
Yeah. Scalloped potatoes. Polenta crust. Gluten free and vegan and homestyled. Jealous?
- 2 cups water
- 1 cup cornmeal
- 1 tbsp mix of salt, basil, garlic powder, black pepper, oregano
- 2 medium russet potatoes peeled and sliced thinly (you can use a mandoline to save time)
- 1/2 onion sliced very thinly
- 1/2 orange bell pepper
- shredded vegan mozzarella
- 1/3 cup of soy creamer
- salt and pepper
Bring water to a boil, slowly pour in cornmeal and spices. Once the mixture starts to get thick (it will very fast), remove from heat immediately and stir
Pour onto a pizza pan (you may want to double the crust recipe) and let it cool for 3-4 hours
Bake at 375F for about 20 minutes and let it cool
While the crust is baking, sauté onions and pepper with a bit of garlic and olive oil for about 3 min or until the onions are caramelized
Arrange potatoes onto the crust, pour onion mixture over it, pour cheese and salt/pepper to top it off
Before going in the oven, pour creamer over the potatoes
Bake for 40 minutes or until potatoes are cooked through!

orange, barlett pear, chocolate-coconut oatmeal with seeds!
To make oatmeal:
-1/3 cup of oats
-2/3 cups of soy milk
-1 tbsp chocolate chips
-1/2 tbsp shredded unsweetened coconut
-1 tsp flax seeds
-1 tsp chia seeds
-1/2 tbsp pumpkin seeds
-1/2 tbsp sunflower seeds
-1 tbsp raisins (optional)
Mix everything together the night before and leave it in the fridge, reheat the next morning to make it really ooey gooey and delicious :)
Sorry I’ve been away. Returned to my normal diet for a solid 12 days now and I’m surprised by two things:
1. I can’t stop eating protein rich foods. Craving it all the time.
2. Can’t stop missing the vegan life.
I am weird???!?!?!?
Being vegan was never a life goal that I wanted to adhere to, it was simply sparked by a challenge I had done in July and carried out with me till now. I do it for fun, for challenging myself and also for the environment! I’m returning to a normal diet now but I will keep 80% of my meals vegan. Don’t worry there will be more vegan recipes to come in the future ;)
